tonight I'll have to make a list of mods I use that I would recommend for you, but atm I can't access my computer. I'll get back to you tomorrow.
As for the daggerfall, i've never used it. you need to bind a macro to toggle that on-off, so i would assume it's easy to switch back and forth between the two. I'll test that out tonight too.
I did upload that video I said I would upload, but my computer is 3 years old, so I can barely handle the graphics when my FRAPS is recording, resulting in 5 fps average framerate. Either way, I managed to do a run through Seyda Neen with my current gfx settings (there's a bug or two due to conflicting mods, resulting in an NPC spawning inside a tree though).

I'll put the description of the vid in spoilers to shorten the post length (recommended to read, since it tells you the max gfx available compared to what you currently see):
This is nowhere near the max graphics available, my computer is too old to handle anything better.
The mesh detail is set on Low, instead of the max of Ultra High, the world resolution has a max of over 8000, this is only about 2000 (don't remember exact #'s), you can see all the map at once with the distant lands feature, I'm only seeing 3 cells away. The high detail shadows feature is turned off. And this just with the Morrowind Graphics Extender. I've also got several re-texture mods installed, including vality's bitter coast and ascadian isles, better bodies, and Morrowind Visual Pack, among others. Then there's the ENB series that I do not have installed on this that adds Bloom, HDR, Occlusion, plus more. Not to mention the elusive Grass mod created by Vality, which I have not been able to find (if you know a link to download this that still works, please post it, it would be immensely appreciated).
Morrowind certainly can handle much more graphics-intensive settings, but my 3 year old computer cannot. Sorry for the 5fps throughout the video, I edited it as best I could to make it run smoother.
There's a couple dozen mods combined to make my game, so a list is necessary if you want it to look similar to mine. I'll make a download file of my many mods if you want, for quick and easy installation of all or select ones, instead of hunting through half the internet.
