Listen to her! I don't think anyone can stress how awesome it is.  It's well beyond awesome.  If there's one series you try out of this whole topic, I say do this one.  It's brilliant.
 
I recently had Star Ocean in my hands, but I was kind of hesitant to pick it up.  Any thoughts either way?

(I've played the Super Famicom one, and liked it)

If you like aimlessly mashing the X button, go ahead. The Second one is much better imo.

I'm not sure if this game is "under the radar" or not, but I had bought this game a long time ago (can't remember when) and loved it. Try "Thousand Arms" (PSOne)

TA was good, but the battle system was balls. The music was excellent as well.

Try to play through Koudelka before Shadow Hearts otherwise you won't appreciate the story at all.  SH2 was kind of "meh" but beyond the world or whatever the third game was is pretty grand.

Then there's the SMT games (nocturne, digital devil saga 1 and 2, and persona 3/FES).

I also somewhat recommend Magna Carta and Metal Saga but only because I'm a Metal Max fan.  Steambot Chronicles was okay in short bursts.

I also recommend Dark Cloud 2.  Play the first game if you want to appreciate the amount of good changes they made in the sequel (the game sucks) but DC2 is pretty much everything a sequel SHOULD be.

I'd really have to agree with marcus about playing "Koudelka". The game was really good (in my opinion) with a nice setup of random encounters with a tactic battle system.

Also the "Shadow Hearts" series is pretty good as well (the first one is better then the second in my opinion), though I can't speak much about part 3 because I honestly never gave it a chance because Yuri wasn't in it =x

In addition, Shadow Hearts may be teetering on the line of being popular or not, but you should try that as well.  It's hard to find the first game (at least for me) but you can play the second one without needing to play first game (it helps though).  Even though people don't like the third one, it's still quite good as well.  It doesn't follow the first two, so it stands on its own.  Also, Shadow Hearts has always had an interesting battle system.  Give them a try if you haven't.
I remember that game it was the first game I had for my PS2, I loved it.  but personaly my favorit rpg's are

1) FFX, X2, XII
2) Champoins: Return to Arms
3) Kingdom Hearts I, II
4) Okage

This is a little off topic, but take the PS3 game Haze, it got horrible reviews and people alwasys are saying it was terrible, but I know plenty of people (including myself) that love the game.  It's simmilar thing w/ Okage

Well the battle system was horrible and random, but the character design, story and soundtrack were all well done. It was very comical, and because of that I could look past the battles. But I can see what you mean, its a very frustrating game.
 
Baroque is pretty good. For a repetitive roguelike it's surprisingly original and bizzare. It has a pretty steep learning curve but isn't all that hard once you get used to it.

Shit, how did I forget Suikoden III? Most overlook it because IV and V are awful, awful shit, but its perhaps one of the greatest PS2 games ever made.
 
Suikoden V was not that shitty. IV was, i hated it, but i could still like V.

Also, you should try and play Baldur's Gate series. They're a good RPG experience, although a lot different than most on the PS2

If you're gonna play Baldur's Gate, skip to BG2 and play the PC version. The console ports of infinity engine games are generally horrible.

BG Dark Alliance 2 wasn't bad though. I liked the style.
