Fantasy General (a massively underrated, old-ish turn based strategy game):

Chrono Trigger (one of the only two games that's managed to make me cry)

Planescape: Torment (the other game fitting that descriptor):

Shadow of the Colossus. I've never actually played the game or owned a next-gen console system, but I had the OST for a while and was greatly impressed. I still listen to remixes of its tracks.

The original DOOM by ID Software.

I'm not sure if it'd fall under my favorites, but Dune 2000 had some fantastic music.

All Final Fantasy Games
Metal Gear Solid Games
Valkyrie Profile 2
Chrono Trigger
Deus Ex - The original and the conspiracy : nothing special but atmospheric.

Can't think of any more. :specs:

Silent Hills 1, 2 and 3. 4, 5 and Origins had a few good tracks each but overall the music (which is a huge part of the reason I got into Silent Hill - demo trailer OPM 99) was a letdown.

As a second choice, and I hate to admit it, but the Halo soundtracks are quite beautiful and work as pieces all by themselves. Mirror's Edge accomplishes this as well ... especially that end of demo trailer piece, beautiful.
