I have a whole lot of fave but to list a few: Record Of Lodoss War, Air Gear, Slayers, Utawarerumono, Fullmetal Alchemist, Samurai Champloo, S Cry Ed and a couple of others. I'll post a big list later. Post your favorites here. :)

i more or less hate all anime but there are a few notable exceptions: namely The Melancholy of Haruhi Suzumiya, Ichigo Mashimaro, and Last EXILE.
 
1. Gankutsuou: The Count of Monte Cristo
Incredible story(changes from the book, and an entirely different ending), incredible animation, and incredible music. Also has a decent dub.

2. Noein

3. Elfen Lied
One of the most emotionally impacting animes out there. A little heavy on the blood, gore, and nudity though. Don't watch it around the parents. I know a guy who breaks down and cries whenever you mention something connected to EL, that's how impacting it is.

4.Turn A Gundam
The best Gundam series ever made. The characters and mechanical design are great(and non generic, YAY!), and the story is incredilbe, written by the origional creator of Gundam.

5. Witch Hunter Robin
A pretty cool mystery/sci-fi/horror series, deep plot, lots of action, incredible animation and character design. The sound quality is also quite nice, and the dub is incredible.

6. Vision of Escaflowne
Another great series. Some of the best animation of its time, and an incredible story, with an incredible fantasy setting. The music is also quite good. However, the dub is terrible.

I know I'm missing some but that's all I could think of off the top of my head.

One I almost forgot! Gungrave. That's a awesome anime. They don't do much talking, but just the animation is enough to cover that. If you look at the characters expressions you automatically know.

Everything by Hayao Miyazaki. The man is a god.

For those who don't know, that's The Castle of Cagliostro, Nausicaä of the Valley of the Wind, Laputa: Castle in the Sky, My Neighbor Totoro, Kiki's Delivery Service, Porco Rosso, Mononoke Hime (Princess Mononoke), Spirited Away, and Howl's Moving Castle.
 
My most favourite anime ever is quite an unknown one: Mahou Shoujotai. It really showcased storytelling at its best, and especially the second half of the series had a lot of brilliant plot twists.

Other awesome ones are: Noein, Simoun (one of the best character-studies I've ever seen), The Third, Escaflowne, .Hack//Sign and Mushishi.

Also, I've been wondering if any people have seen the title "Master of Epic". It's basically one huge parody of the MMORPG-genre (which worked out brilliantly in my opinion). The series itself is pretty unknown, but in an RPG-design-community, I was wondering if other people were interested in it.
 
You mean NOT including the anime I watch in my head that I dream of making someday? I guess that would be....

Uninhabited Planet: Survive!, xxx-Holic, Petopeto-san and Gunslinger Girl are my favorites.
 
After watching the first 3 eps, Yakitate! Japan's shaping up to be one of my favourites. Azumanga tops my list so far, followed by Spirited away and other Mizaki(sp?) works. Used to be a fan of Naruto, but I'm starting to get sick of heavily themed adventure type storylines (romance as well).

Give me anything that's FUN.
