FF2: Hmm... Maria maybe... She didn't really have much of anything special... neither did Firion but still...
FF3: Luneth ^_^ He could switch between Summoner or Sage
FF4: Kain... which is a given.
FF5: Lenna could switch between Red Mage or Mystic Knight
FF6: Locke would be a good bet... or Celes rather. Celes with her Runic blade... hmm...
FF7: Tifa... Given... she is awesome.
FF8: Hm... Seifer
FF9: Vivi duh
FF10: Auron as SAMURAIIIII
FF11: ???
FF12; ???
FF13: Lightning

For Final Fantasy 12 it should be Balthier, the gunslinging pimp- er...sky pirate.
I guess Vaan would have to be it, thoguh, since he was the main character.
