Did anyone say Final Fantasy VI? It's really one of the few console Steampunk games.

Chrono Trigger changes depending on the age, but it's mostly Steampunk as well.
 
Honestly, I can't think of more than 5 games that are actually medieval in the correct sense. Plenty are traditional fantasy, but that's often a completely different animal since it almost always includes a futuristic level and a deminsional void level which Im pretty sure didnt exist in the ol' dark ages.

Gosh, I can't believe I didn't think of Earthbound immediately.

I dont play that many, but one that I have liked a lot is Star Wars Knights of the Old Republic 2.

It is such a huge game!
I have not beaten it yet, but I have already put in over 60 hours of gameplay!
 
I'm a star-wars nerd, and a RPG nerd, so any time the two converge, I become very nearly pregnant. Fertile, at least.

Oh, also, I really enjoyed Rogue Galaxy. I think the trick is seeing it for what it is - a retardedly customizable dungeon crawl.
 
Uhm...Summon Knights (but only the first, the second was obviously medieval...)
Final Fantasy VI, Dark Chronicles (or Dark Cloud 2, depending on how it's called in different nations), and maybe...Final Fantasy X-2, as the X is much similar to the V (Ruins, but no technology).

You'd think with the improved technology and success the first two met this would've happened ages ago instead of Squeenix going on about their remake rampage.

I've played dozens of non-medieval RPGs, but maybe because I have a very narrow definition of what medieval is. Among those that roll of my head would be the Shenmue series, Wild ARMs, Evolution, Phantasy Star and Xenogears.

The new Parasite Eve installment has yet to receive a release date.
