Colour isn't pronounced "Cullor", it's pronounced Culluhr. So Colour fits better than Color. Color always looks more like Collar actually.

Generally in English things aren't spelt how they're pronounced anyway.

Meh, the "u" just breaks up what would otherwise be "or" which is far off colour's pronounciation.
