Mixing and Mastering, any tips?

Ok, I think I have the music composition part down...but I'm sorely lacking in the process afterwards.  I just can't seem to get things right with the mixing/mastering.  I try to pan things a certain way, but it still doesn't sound right.  I know you're supposed to keep the bass type instruments centered, but I'm still lacking something, I just don't know what I'm doing wrong.  Volume levels or what?  Any tips of what you do are greatly appreciated!

Thanks rexxz, very helpful.  I have Cubase SE(the cheap one..heh), and I've tried to fiddle with the frequencies and what not, but got nowhere.  That little tutorial helps me understand where to start.  :thumb:
