and also it looks like for items "Health Recovery" can only go up to 100, but "%Health Recovery" can go way beyond that..................................

PDEF and MDEF increase defense. PDEF is Physical Defense, and MDEF is Magic Defense.

so if i put a + on a wepon for status change poison, the target will get poisoned?

what does "poisoning" do?
and delay?

All stat inflictions cause the victim to receive that status effect. If you go to the status effects tab in the database, you can see what each effect does. Poison inflicts damage over time, delay ...well, delays, etc...
