About Mexican food, yes I agree that AUTHENTIC Mexican food is all about meat, I've eaten Mexican food IN Mexico before, but that whole food-ethnicity is fun to mess with. I can eat almost anything with lime juice & cilantro on it.

my dad rides his bike to work every day and my mom is a nurse/nutritionist. Because of so my family is pretty healthy. Nonetheless Ive found that aiming for 1500 calories a day, no matter how you get them, tends to be all you need to maintain a generally healthy weight, so long as you get a *little* exercise every week (preferably cardio).

A great way to keep the pounds off Ive found is actually to drink lots of fruit juices instead of sodas and avoid large meals that you can put off (not hungry right now? Don't eat). Also, small forms of exercise like simple manual labor jobs like prexus mentioned are good. Parking your car farther away and walking, or riding a bike places are also good. Get in as much exercise as you can, or at least want to, and avoid any excessive eating. Additionally, drinking plenty of water at meals never hurt either.

Thats the simplest way to keep a healthy weight. Ive been stuck at 112 lbs for the past three months as a 15 yr old 5'2" sophomore. I'm skinny as fuck and in terms of muscles I can bench a  good... 50lbs. It might be slightly different for some of you, but what I just described is my way of keeping a healthy weight.

Edit: also, if you need some caffeine every morning, go for some coffee with sugar. avoid Sodas as best you can, but if posed with the choice of regular or diet soda, take the regular. Diet sodas are for diabetics who can't have sugar, and they can simply wreck whatever diet your on. Unless you're diabetic or are avoiding sugars, avoid diet sodas. better yet, don't drink soda at all.
 
I've gained a shitload of weight since I got to college. I don't know how much since I don't have a scale, but I'm scared to find out. :x I dunno, I like food too much to go on a strict diet, and besides, I don't think the idea of "going on a diet" actually works. You have to make permanent lifestyle changes, not just temporarily change your eating habits, or you'll just gain the weight back. I've been meaning to start doing cardio in the morning before class--I don't really have an excuse not to since all the dorms have exercise rooms--but it's hard to drag your ass out of bed early when you're chronically sleep-deprived as most people are here. I dunno, I'll just try going to bed earlier, I guess. I hate exercise, but exercising is an important part of being healthy anyway, so I might as well stop complaining and get into the habit now. :(

As for food, my dorm has kitchens, and there's a grocery store within walking distance, but I don't have time/energy to cook as much as I'd like, and veggies go bad so quickly that I end up throwing out half of what I buy. Another problem I've had is that I take Adderall (although not as regularly as I did in high school because I kind of hate it), so I'm prone to not eating for 14 hours at a time and then only a little. Kills my metabolism. :x On that note, I've heard that splitting your food up into 5-6 small meals instead of three big ones helps a lot.
 
You should probably talk to a dietitian about what to do if you can. I've known someone who just started walking more often and she lost a lot of weight, and I know people who've just changed their diet.

As for me, I'm a health and exercise nut big time. I still have a LOT to learn, but I've been reading and studying exercise, weight lifting, muscle growth, fat loss, and all that since high school, and I'm pretty religious about it. Since I'm in college, I try to make it a point to get to the gym on a schedule and a routine. I've gotten a lot of progress since I've started, man. It's pretty refreshing.
 
Once you hit adulthood things get hard.  Recreational time shortens and your metabolism becomes gay.  I'm not in the best of shape simply cause I don't exercise enough and enjoy eating more than I need.  I do really want to get back to my best shape to get my pace and acceleration back to it's best for football as it was, and still pretty much is my main asset... but whether I want it enough to resist that bacon sandwich is another matter.

I know if i did want it back, high pace jogging, sit ups and far less food intake would get me there in 2 weeks but as it stands the love handles are there for now.

When I was 17 I could pack away 3000 calories a day and stay perfect. Only 7 years later, it seems like I gain a pound from eating a potato chip :/
