For the PS3, Assassin's Creed. Bioshock comes out in October. Elder Scrolls IV: GOTY edition isn't a bad buy (although it's not quite as good as ESIII, to me). Gran Turismo 5 is stellar and ought to tie anyone over until the actual GT5 comes out. LEGO Star Wars is way, way too much fun (but a much, much better fit on the Wii somehow). Lost Planet isn't bad, but to my mind more of a renter than a buyer (unless you rent it and really like it: several friends loved it.) Definitely get Ninja Gaiden Sigma if you don't already own Black for the Xbox. The Orange Box is absolutely worth it: HL:E2 is fun, Portal is just astounding, and Team Fortress 2 is a GREAT multiplayer game. No matter what you may think of Soul Calibur, SCIV is surely the best of them all so far. Feel grateful you won't have the 360 version: Yoda is SO CHEAP. GRAW2 is excellent. If you liked the original Turok for the N64, the new Turok is pretty fun.
Other than those, you've got Final Fantasy XIII and Versus XIII to look forward to (sure they're on the 360, but unless the 360 is multi-disc, I get the strange feeling the PS3 version will be superior), as well as Resident Evil 5, (hopefully) Mirror's Edge, and a few others.
Top current suggestion is far and away Assassin's Creed.
