Anyone know where to find a midi maker/editor?

I remember a few years ago there was an awesome midi editor that had alot of tools to convert some instruments into other instruments.. such as timpani, music box, piano, harpiscord, organ.. etc.

Well, the only MIDI makers I have in my mind are Noteworthy composer, FL Studio, and maybe Anvil also. But, could try being a bit more specific?

Yamaha's XG SoftSynthesizer allows you to change the music's instruments but you cant save it.. period you can just listen but I want to save whatever I change.

Anvil is what I use. Not that I'm a composer or anything, but sometimes I like to switch out instruments. There're some instrument packs floating around on the internet somewhere to compliment its pre-existing library. Anyway it's free so that's the real draw. All you have to do is click on the instrument and select a new one from the list, couldn't be simpler!
